Bone broth can be a very healing addition to your diet.

Bone Broth

Traditionally, people have consumed bone broth on a regular basis around the world.  In fact, in many cultures, it is the basis of stews, soups, and grain dishes.  It is something of a lost art here in the United States where it’s very easy to pick up pre-made stock at the grocery store.  Cooked from scratch, bone broth is a nutritious liquid that is made from cooking animal bones (poultry, beef, lamb, or fish)  in water for an extended period of time.  As the bones are simmering they release nutrients and minerals into the broth that can be easily absorbed and assimilated.

Bone broth is incredibly healing, as it contains a high amount of antioxidants, vitamins, and many minerals, including calcium, silicon, sulfur, magnesium, glucosamine, phosphorus, chondroitin sulfates, and gelatin.

Easy Bone Broth Recipe:

Ingredients:

  • Whole, free-range chicken
  • apple-cider vinegar
  • 1 onion
  • 6 peppercorns
  • 3 bay leaves
  • 6 cloves of garlic
  • 4 carrots
  • 1 bunch of celery
  • 3 potatoes

Directions:

  • Place a whole free range chicken in your crock pot
  • Chop all vegetables and add to pot
  • Add spices to pot
  • Fill the pot with cold, filtered water
  • Add 2 tablespoons of apple-cider vinegar
  • Cook on low for 24 hours
  • After 24 hours, remove chicken, chicken pieces, and vegetable with a slotted spoon – reserve for other dishes if desired
  • Strain stock and reserve liquid in covered containers in your refrigerator or freezer

Use this stock as the base of your cooking for the week –  in soups, sauces, or in place of water/liquid in any other recipes.  Try to consume at least 8 oz of broth a day.
